Sweet potatoes with peanuts is a recipe commonly prepared in Vietnamese cooking. Sweet potatoes are boiled then topped with ground peanut to create this delightful vegan side dish.


  • 2 cups water
  • 2 sweet potatoes about medium size, peeled and cut into bite size cubes
  • 1/4 cups roasted peanuts, chopped
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 c. roasted peanuts, chopped
  • 1/2 cups sugar


1. In a large saucepan, bring water and sugar to a boil over high heat.
2. Add sweet potatoes and cover. Turn heat to low and simmer for 10 minutes, or until tender.
3. In a colander, drain sweet potatoes and place in a serving bowl. Add salt and pepper and stir. Sprinkle with peanuts and serve hot.

Additional Tips

When preparing this recipe for Sweet Potato and Peanuts take care not to over boil the potatoes, they'll get mushy and not have the expected texture. Also I find that using fresh organic sweet potatoes tastes MUCH BETTER than the industrially produced type.
