Home Mains Walnut and Cheese Burgers (Nut Based Veggie Burger Recipe)

Here is another one of the infinite variations of the veggie burger recipe, this time we are getting a little nutty, and perhaps a little cheesy as well. Poor attempts at humor aside I cant encourage you enough to try this veggie burger recipe; it is truly satisfying. If you are vegan and aren't down with dairy and or eggs then by all means use an appropriate substitute.

  • 1½ cups shelled walnuts
  • 2 slices of whole wheat bread, cubed
  • 1 cup grated cheddar cheese
  • 1 onion, peeled and grated
  • salt, to taste
  • Freshly ground black pepper
  • 1 egg
  • 1 tablespoon tomato paste
  • Oil for shallow frying

Put the nuts in a blender or food processor, reserving about ½ cup for later. Add the bread and grind coarsely. Transfer to a bowl, add the cheese, onion and salt and pepper to taste and stir well. Beat the egg with the tomato paste. Add to the nut mixture and stir until well mixed.
Divide the mixture into four parts on a lightly floured surface. Shape into burgers, about 8 cm in diameter and 1 cm thick. Chop the reserved walnuts and press into both sides of the burger. Heat a small amount of oil in a frying pan, add the burgers and fries for about five minutes until browned on both sides, turning once. Alternatively, place the burgers on a lightly greased baking sheet and bake in a preheated oven [°400F] for 20 minutes until browned. Serve hot or cold, garnish with tomatoes and watercress.
