Mango Curry is an instant classic. Easy to prepare and vegan. I had heard of mango curry in the past and hadn't had the chance to try it until recently. A friend of mine was studying yoga in Mysore, India and told me that this was a very common dish over there. She suggested I try it. I did and am grateful for the recipe and encouragement! Try this recipe for mango curry and see for yourself.


  • 4 ripe mangoes, peeled and  cut into 2cm (half inch) pieces
  • 1 tsp ground turmeric
  • 1 tsp cayenne pepper
  • 1 tsp cumin powder
  • 1 1/2 tsp salt
  • 50g / 2oz brown sugar (optional)
  • 1 can of thick coconut milk
  • 1 tbsp cumin seeds
  • 250ml/ 1 cup plain yogurt, lightly beaten (watch for gelatin in the yogurt! Or,.. use soyogurt instead)
  • 2 tbsp vegetable oil
  • 1 tsp mustard seeds
  • 1/2 tsp fenugreek seeds
  • 10-12 fresh curry leaves, if avaliable


1) Put the mangoes in a pan. Add Coconut milk. Cover and stew for 8-10 minutes over a meduim-low heat. Stir occasionally. Add the turmeric, cayenne pepper and salt. Stir well. If your mangos are a little tart or under sweet, add enough brown sugar to suit your taste.


3) When the mangoes are cooked add the cumin powder. Cover and simmer over a medium heat, stirring occasionally, until the mixture becomes thick, about 10-15 mins. Add the yogurt and heat, stirring, until just warmed through. Do not let the mixture come to a boil. Remove from the heat and set aside, taste and adjust seasoning if required.

4) In a separate pan heat the oil over a meduim-high heat. When hot, add the mustard seeds. When the mustard seeds begin to pop (a matter of a few seconds) add the cumin seed, fenugreek seeds and the curry leaves. Stir and fry for a few seconds until the chillies darken. Add the fried spices to the mango yogurt mixture. Mix well. Enjoy!

Additional Tips

Mango curry is delicious. Prepare this recipe and serve it with all the Indian fixin's such as pickle, samosa, rice, nahn, and other curries. As with any curry, feel free to modify this recipe. Some may prefer their mango curry on the hot side, or perhaps the sweet or salty. Whatever you preference you can easily emphasize you favorite flavors by adding more of them to this mango curry recipe.
