Description

Vegan Aloo Curry. Try this out for a simple and delicious curry!

Ingredients

  • 1 lb. potatoes, peeled, boiled and cut into bite size chunks
  • 2 tomatoes, chopped
  • 2 onions, chopped
  • 1 green chilie, chopped
  • 1 tbsp oil
  • 1 tbsp each mustard and cumin seed
  • 1 tsp coriander powder
  • small handfull of curry leaves
  • Salt to taste
  • Cilantro (aka coriander) leaves for garnishing

Steps

1) Heat the oil over med-high heat, add the mustard and cumin seeds, curry leaves and fry for few minutes.

2) Toss in the green chilies and onions and fry for about 5 minutes.

3) Add the tomatoes and cook until they are soft. Add the potato pieces and stir the curry.

4) Add about a half cup water and salt to taste. Continue to cook until the water evaporates.

5) Add coriander powder and remove from heat.

6) Sprinkle cilantro leaves on top.

Additional Tips

Serve this vegan aloo curry with rice, roti and Indian pickles. Experiment with it.
