Description

Kefir is a delicious, probiotic and effervescent beverage similar to soda pop. Kefir is the product of 'kefir grains'. Kefir grains are small globular collections of yeast, bacteria and other micro biotic life. Water kefir is made from water, your choice of sweeter (sugar, maple syrup, etc) dried fruit and lemon. Kefir Grains are allowed to ferment the mixture for a period of time. The grains are removed and you have kefir. Kefir grains will last forever and will multiply with proper care. Ingredients

  • 1l (4 cups) Glass jar, or suitable container
  • 60ml (1/4 cup) maple syrup or organic sugar
  • 10 raisins or other dried fruit
  • Juice of ½ lemon (or equivalent)
  • Kefir Grains
  • Clean water - Spring, RO filtered or distilled
  • Strainer or colander (non-metallic)

Steps

Mix the water and sweetener together in the glass jar. Add the raisins or other dried fruit and lemon juice to the water and sweetener. Stir to mix. Next add the kefir grains to the jar. Allow the jar with the grains and the sweet water mixture to sit overnight at room temperature, 8-15 hours.
Next, pour the mixture through the strainer or colander to separate the grains from the fresh kefir, pick out any raisins in with the grains and add them to the fresh kefir.

Enjoy your fresh kefir!

Rinse out the jar, and repeat instructions

Kefir can be stored in a non-metallic container in the fridge and consumed at your leisure.

Additional Tips

Kefir is a delicious drink any time of day. Feel free to mix up the ingredients for the sweet water. Adding different fruits or herbs to the kefir will yield interesting flavor combinations. Be sure to use only top quality water and other ingredients; ensure there are no preservatives or any other chemical/ substance added to your ingredients that would inhibit the kefir grain's activity. If you must use tap water, please ensure you have removed any chlorine.
