What is a Mexican dish without re-fried beans? This healthy and low cost dish is easy to prepare. It is an essential addition to burritos, tacos, tamales and nachos. Dip it, spread it whatever you'd like. Of course this classic recipe for refried beans is completely vegan.

Ingredients

  • 2 tablespoons of oil
  • 2 cups cooked beans (home cooked are best, canned will do)
  • 1/4 cup broth from cooking beans or water, more as req'd
  • 1 teaspoon cumin
  • 1 tablespoon minced fresh cilantro
  • Small onion, chopped
  • 2 cloves garlic
  • 1 tablespoon balsamic vinegar
  • Salt
  • Tabasco sauce

Steps

In a large fry-pan, heat the oil over medium- high heat. When hot, add the garlic and onion, gently fry until they begin to turn brown. Next add the beans and 1/4 cup water. Cook, stir- ring and smashing the beans with a fork or potato masher,until the beans are a thick paste, about 10 to 15 minutes. Add more water or bean broth as needed to keep the beans from sticking and to achieve the desired consistency. Stir in the cumin and cilantro and vinegar. Season with salt and Tabasco to taste.
