A vegan version of french toast! Eggs are replaced with banana and coconut milk to create a surprisingly delicious vegan version of french toast.


  • 2 ripe bananas mashed up in medium size bowl
  • 1 can coconut milk
  • cinnamon to taste (optional)
  • 2-3 teaspoons of brown sugar
  • 1 loaf bread of choice


1.) mash bananas in bowl

2.) add other wet ingredients and rigorously stir (a food processor may be used as well)

3.)add cinnamon and sugar (sugar optional)

4.) warm skillet, add oil, and place bread soaked in the wet ingredients on pan, cook until browned on both sides

Additional Tips

Vegan french toast is a great way to start the day. French toast vegan style is more than a simple vehicle for syrup. They are great on their own. Of course a little syrup, compote, jam or honey take vegan french toast from great to even better. When frying the french toast be sure not to allow too much liquid into the fry pan.
